Tradition is a hallmark of top sushi restaurants, but  Stability differs in its creativity. The dishes here are intricate but not gimmicky: no dragon rolls tricked out with a dozen ingredients. Instead, we offer sea bass sashimi topped with spicy cucumber vinaigrette or a fried Kumamoto oyster nigiri with yuzu kosho (chili paste with peppery and salty flavors), aioli and squid ink bubbles. We even replaced the clich├ęd sushi-bar look with dark, warm colors.
